5 for Friday

Happy Friday!  Happy Long Weekend!? Do ya'll have off Monday too? Rob and the kids are off Monday. I am looking forward to an extra day of all of us together. 

Here's 5 things I wanted to share with you:

1. So many of you asked about the Color Run. We actually did the Color Me Rad 5K two weekends ago. Same idea. Just a different race name and this one was is Raleigh.

At each kilometer, you get sprayed with a different color. Some kilometers colored powdered corn starch was pelted at you. Other kilometeres, it was in liquid form and sprayed from the containters you spray weeds with or the bug man sprays the perimeter of your house with.

Rob, Anna, David, and I did it. Well, I actually ran 1K, walked 1K, ran 1K, walked 1K, ran 1K. But I still got the rainbow pictures I wanted.

I still do not like running; I get kinda bored. This is my second 5K. I talk about my first one, the one I did in June here. I do not think I will sign up for another one. But I did prove to myself 2 things:

1. I will not die if I push myself beyond what is comfortable. I can sweat profusely and breathe hard and not die. Don't laugh, don't judge.

2. I can do something I thought was impossible to do. Me running? I thought that would never happen. I have believed I am uncoordinated and unathletic all my life. And those thoughts have paraylzed me. Running a 5K may not seem impossible to you. But somethng you really want does. What is that? Is it getting out of debt? Is it keeping an organized and clean home? Is it a good relationship with your kids? What do you think will never happen? And then what beleifs are paralyzing you?

I now know I am fully capable of getting started on a goal, sticking to it, and seeing it to an end. And you are too!!

5. I have had so much positive feeback about my Freezer Cooking blog series. So many of you have asked for more. So many of you have emailed me your favorite recipes that freeze well. Oh, we really can get dinner on the table every night. I will be sure to share more, but until then you may want to check out the red horizontal bar at the top of my blog (if you get this in email or a reader, you will have to click the blue title of this post to be taken to my actual blog). And here is an easy Crockpot recipe that freezes well: Crockpot BBQ Chicken

Perhaps you can make this this weekend. Have it for lunch or dinner and freeze the leftovers. Just remember to let the bbq cool before you put it in Ziploc bags to freeze.


2 lbs. chicken breast

½ cup ketchup

½ cup BBQ sauce (I used Sweet Baby Ray's Orginal)

½ cup brown sugar

add crushed red pepper flakes if you like your bbq spicy

Note: I triple this recipe. I have a huge crockpot. Remember my post My Top 3 Crock Pot Tips? The  #1 tip was you want your crockpot to be 2/3 way full. A Crock Pot should always be 2/3 full to ensure proper cooking. If your food cooks too fast, burns, or is very dry. . it is probably because of this 2/3 rule. You either need a smaller Crock Pot or you need to double the recipe. So double, triple, etc. this recipe until your crockpot in 2/3 full.


Mix all ingredients in crock pot.

Cook on high for four hours or low for six hours.

When cooked, remove chicken breast and shred.

Return to pot and keep on warm until ready to serve.
